Does shadowing for college credit count?
When I was in my junior year of undergrad, I was on the pre-veterinary track of medicine, and I shadowed a local veterinarian for 3 semesters for 1 credit hour per semester (about 100 hours total of shadowing), and some of the times I would actually get involved in procedures, such as surgeries. Since this is still a field of medicine, would it look attractive to put this in as shadowing experience? Wouldn't it just show in a positive way that this is what I have experienced thus far to get to my final choice of the PA profession?

You should definitely claim this. The shadowing category is supposed to be for shadowing "health professionals," so technically, this would count. But I think the intention of this category is for shadowing health care professionals in human medicine. They might ask you to claim this as "Other Work Experience."
