Letters of eval before your application cycle

If I am not planning to apply to PA schools until the 2017 or 2018 deadline, is it still possible to have my references upload evaluation letters to CASPA in the coming months or will these evaluations be wiped in the next application cycle? I just finished undergrad and took all of my prerequisite courses, and I'd love to have a professor write me a recommendation. However, he was diagnosed with Parkinson's and is concerned about his declining cognitive abilities, so would rather write a letter sooner rather than later. I know CASPA doesn't accept services such as Interfolio either, so I wanted to ask if applications are wiped between application cycles, or if I could start one today and use it for summer 2017.
